Some Of Our Famous Recipes


2 skinless, boneless chicken breasts
1 diced bell pepper
1 diced med onion
1 teaspoon chopped garlic
1 diced tomato
2 sliced jalapenos
¼ cup chicken stock
1/3 cup heavy cream
1/3 cup shredded cheddar cheese
Salt and pepper

 

In large skillet, over med heat, cook only until chicken breast turns lightly brown.  Add onion, bell pepper, garlic, jalapeno peppers, and tomato.  Simmer for 2-3 minutes.  Add chicken stock, heavy cream, and cheese.  Add salt and pepper to taste, simmer for another 1-2 minutes.  Serve over rice or pasta

 

Quesadillas

1/3 Cup Cheddar Cheese
1/3 Cup Monterey Jack Cheese
2 oz. Chopped Tomatoes
1 oz. Minced Onion
12" Flour Tortilla
1 Teaspoon Oil

Take one teaspoon of oil and place it in a preheated skillet.  Place the tortilla in the skillet and put all ingredients combined on one half of the tortilla.  Fold the other half of the tortilla over to form a pocket.  Brown on both sides,  making sure the cheese inside is melted.  If you like, you may add either grilled chicken or steak to the ingredients when making the quesadillas.

 

Fajitas

2 Large Green Peppers
2 Large Red Bell Peppers
1 Medium Onion
1 Teaspoon Garlic
Salt & Pepper To Taste
Flour Tortillas


Chop the onion and Peppers, then mix them with garlic, salt, and pepper.  Sauté the mixture until the vegetables are soft.  You may add either grilled chicken or steak if you like.  Once done, take a heated flour tortilla and place your mixture inside.  You may top your fajitas with your choice of lettuce, tomato, cheese, onion, black olives, or jalapenos.  Roll it up and enjoy.
